Thick and Sticky Sweet and Sour Sauce



3 tbsp butter 
4 cloves garlic (I used 1/2 tsp garlic powder)
1-1/2 cups ketchup 
1 cup honey 
1/2 cup soy sauce

Melt butter in a medium/large sized saucepan over medium heat. Once butter is melted, toss in the diced cloves of garlic and let them cook for about 30 – 60 seconds.

Pour in ketchup, honey and soy sauce and stir together. Bring to a boil, stirring frequently. Reduce heat and cover; let cook for roughly 5 minutes.

Guilt Free IP Italian Dressing/Marinade

2 tbsp Italian seasoning
1/4 cup extra virgin olive oil
1/2 cup white or apple cider vinegar
1/4 cup water
Sea salt

Combine all ingredients in a bottle (something you can shake). This can be used on salads or on your meat before cooking. This will yield 6-8 cups of salad or a whole head of lettuce.

Put lettuce in a bowl with fresh veggies, pour pour dressing on, lid the bowl, and shake it. This will coat the lettuce nicely and the rest will go to the bottom of the bowl so you aren't drowning the salad.

Reminds people of Olive Garden salad!

This will be another great one for chicken.

Amanda's Stirfry Marinade (My Favorite Marinade)

3/4 cup extra virgin olive oil
1/4 cup soy sauce
2-3 tbsp worcestershire sauce
1 tsp ginger
2 small onions, finely chopped (or 1/2 tbsp onion powder)
3 - 6 garlic cloves finely chopped OR 3/8 - 3/4 tsp garlic powder
2 tbsp vinegar
1/4 c packed brown sugar or use stevia instead
Sea salt

Edit:  I've also made this without the extra virgin olive oil for a stirfry sauce.  Sooooo good!!

I use this recipe a lot, and often make 2, 4 or even 6 times the recipe.  It sits in the fridge (sans olive oil) until I'm ready to use it.  I'm actually going to mark the recipe times 2, 4 and times 6 down here for convenience.

Marinade Times 2
1 1/2 cups extra virgin olive oil

4 1/2 cups extra virgin olive oil

2 tbsp ginger
3 tbsp onion powder
1 1/2 tbsp garlic powder
3/4 cup vinegar
Stevia
Sea salt

Honey Dill Sauce

1 1/2 cups mayonnaise
1 cup liquid honey
2 tsp dried dillweed

Makes 2 1/2 cups sauce.

Diabetes Friendly Sweet and Sour Sauce

3/4 cup water
1/3 cup ketchup
1/3 cup vinegar
1 tbsp soy sauce
2 tbsp cornstarch
3/4 cup Splenda (if doubling recipe, use 1-1/4 cups)
 
In saucepan, combine water, vinegar, ketchup and soy sauce.  Stir in cornstarch.  Cook and stir over medium heat until thickened and bubbly; cook and stir for 2 minutes more.  Remove from heat and stir in Splenda.

"Everything" Sauce (for baked potatoes)

1 cup sour cream
1/2 cup melted margarine
1 cup grated cheddar cheese
3 green onions, minced (or 4 tablespoons minced chives)
8 slices bacon, fried crisp and crumbled (or real bacon bits from a package or jar)

Mix sour cream, melted butter and cheddar cheese together and refrigerate. (This will keep at least a week.) When ready to serve, let the mixture warm up on the counter for an hour or so (while you bake the spuds) then add green onions and crisp crumbled bacon. Spoon over hot, baked potatoes.

Mom's Brown Sugar Sauce

1/2 cup margarine
Brown sugar
1 1/2 - 2 tbsp flour
Water
Salt
1/2 tsp vanilla

Melt margarine on stove. Stir in enough brown sugar to make it soak up all the liquid. put it back on the stove until it bubbles. Stir it really well and keep it boiling for 2 - 3 minutes. Take it off the heat (shut off the element) and stir in the flour well. Put it back on the warm, off element and keep stirring it. Add water, a dash of salt and vanilla.

*Is AMAZING over plain cakes. Likely will want to increase the recipe.
